Isn't Israel's Law of Return a form of racism against non-Jews?

No. It is essential that Jews who are persecuted in other parts of the world to always access their homeland. The ONLY country that the Jewish people have self-determination.
Ireland, Finland, Greece, Czech Republic, Croatia and other democracies have similar laws giving immigrants with ethnic ties to those countries easier access to citizenship. This law does not change the fact that Israel treats all citizens equally under the law, regardless of their background.

The Jewish people came from Europe and took over an established country called Palestine.

There has never been a country called Palestine on the land of Israel. Jewish people have always had a presence on the land for 3000+ years whether it was a majority or a minority during all the years they were exiled from the land. Jewish immigration increased in waves from the late 1800s to the early 1900s and the Jewish people who returned to their homeland built it up and helped to improve the economy of a vastly empty land. The Jewish developments resulted in the creation of employment which brought more Arabs from the surrounding countries to the area to work.
